Dairy alternatives are plant-based drinks, such as oats, rice drinks, and food products, such as yoghurt, ice cream that we typically find made with cows, sheep, goats milk, but they are made with plant-based milk instead.

Today the market for plant-based dairy alternatives is booming! These products are purchased by consumers for various reasons, such us environmental, nutritional, health-related reasons or just because consumers want to try something new. However, dairy alternatives manufacturers face complex challenges in product development, therefore DSM has developed the Delvo®Plant range of enzymes for optimizing the taste, texture and sweetness of plant-based drinks.

 

Portfolio of Delvo®Plant enzymes

Producing high-quality dairy alternatives starts with a liquefaction. In this step, Delvo®Plant enzymes make starch-based raw materials, such as oats and rice, soluble and easy to process to enhance the mouthfeel of drinks.

Depending on the final application, Delvo®Plant can unlock the natural sweetness of starch during the second production step – the saccharification – in order to help manufacturers create products without added sugar.

With other Delvo® Plant enzymes you can also decrease the viscosity of cereal drink, increase the solubility of protein and mineral availability. On top of this, you can even create gluten-reduced dairy alternatives and improve the nutritional value. The result? Winning dairy alternatives that consumers truly love!

Make a drinkable plant-based product with good mouthfeel
 
Delvo®Plant ALT is an α-amylase produced by a classical bacterial strain suitable for low temperature processes like oat. It breaks down starch into dextrins.
Application: cereal/starch based drinks and should be added in the liquefaction step.

  • Breaks interior α-1,4-glycosidic bonds in starch and starch fragments, predominantly releasing dextrins and oligosaccharides

Delvo®Plant AHT is thermostable alpha amylase produced by a classical bacterial strain suitable for high temperature processes like rice.

Unlock the natural sweetness in oat
 
Delvo® Plant GLU is an amyloglucosidase (1,4-α-glucosidase) derived from a selected strain of Aspergillus niger breaking down dextrins and unlocking naturally present glucose molecules.
Application: cereal/strach based drinks and should be added in the saccharification step.

Unlock the natural mild sweetness in oat
 
Delvo® Plant MAL is an alpha amylase derived from a selected strain of Aspergillus oryzae breaking down dextrins into naturally present Maltose and Maltotriose. Maltose and Maltotriose are less sweet than Glucose.
Application: cereal/strach based drinks and should be added in the saccharification step.
 
Benefits and functionality:

  • No need for added sugar
  • Maltotriose is not a sugar on nutritional table
  • Create a less sweet oat drinkApplicable on all type of starches

Further tunes texture
 
Delvo®Plant BGL is a β-glucanase derived from a selected strain of Talaromyces emersonii. The product breaks down non-starch polyssaccharides and influences the viscosity of a cereal drink.
Application: cereal/strach based drinks and should be added in the saccharification step.
 
Benefits and functionality:
  • Decrease the viscosity of cereal drink
  • Enzyme has a broad temperature optimum and a broad pH range
  • Efficient breakdown of non-starch polysaccharides like beta glucans and other hemicelluloses such as arabinoxylans
  • Suitable for production of organic cereal drinks 
Increase the solubility of protein
 
Delvo® Plant TNP is classical bacterial neutral protease. This enzyme breaks down proteins into peptides and has a broad amino acid specificity.
Application: All protein containing plant-based drinks.
 
Benefits and functionality:
  • Protein digestibility and functional properties are increased
  • Increase protein solubilization and adjust mouthfeel
  • Suitable for production of organic cereal drinks
  • Kosher and Halal
Allowing for gluten reduction
 
Delvo® Plant PSP is a proline specific endoprotease derived from a selected strain of Aspergillus niger. This product hydrolyses proteins and larger peptides into smaller peptides.
Gluten is difficult to digest because it contains a lot of proline. These proline-rich peptides can cause an adverse response by the body. Delvo® Plant PSP enzyme is targeting these proline-rich fragments.
Application: gluten containing cereal/strach-based drinks and should be added during the saccharification step.
 
Benefits and functionality:
  • In vitro gluten reduction of the contaminated oat.
  • Gluten levels of < 20 ppm can be reached by the action of this enzyme.
Increase the mineral availability
 
Delvo® Plant PHY is a phytase derived from a selected strain of Aspergillus niger. Phytate is present in cereals (wheat, rice, oat), pulses (pea, faba beans), oilseeds (soy) and nuts (almond) and is a strong chelator of minerals like iron, zinc, calcium and magnesium, in the complex form the bioavailability of these minerals is strongly reduced. Phytase can prevent from forming complexes with minerals.
Application: All plant-based drinks which contain phytic acid.
 
Benefits and functionality:
  • Increased nutritional value by unlocking the natural present minerals
  • No need of fortifications with minerals (label friendly)
  • More than 80% of phytate will be degraded by Delvo® Plant PHY
