2022.07.22 Response from the European Commission on the use of enzyme preparations in the production of organic products


On behalf of DSM Food Specialties B.V., P.O. Box 1, 2600 MA Delft, The Netherlands, I hereby inform you that the product Maxilact® Super:

  • Compliant and fulfill the criteria of European enzyme regulation (EC) No 1332/2008, (EC) No1333/2008 on formulation and organic regulation (EC) No 848/2018 which cover enzymes and enzyme preparations that are used as processing aids.
  • Enzyme preparations used in food at tiny quantities and food enzyme formulating agents will be present in food only in trace amounts without any technological function and so are carrier-overs and are not considered as food additives according to (EC) 1333/2008
  • Therefore, according to the EU regulation on the food information to consumers (EU 1169/2011), enzyme preparations used as processing aids and their formulating agents do not require to be labelled on the ingredients list of the final product in EU.

In reply of EU Commission, DG Agree it was stated that:

Consequently, in accordance with point 2.2.2. of Part IV of Annex II to Regulation (EU) 2018/848, when the enzyme is indeed used as a processing aid normally used in food processing, the food enzyme preparation to be used as processing aid can be used in organic production, when it is not produced from or by Genetically Modified Organisms in line with Article 11 of Regulation (EU) 2018/848.

In this case, it is sufficient that the food additives including those used as carriers present in the preparation are normally used and authorised for use in food enzymes and thus included in Annex III to Regulation (EC) No 1333/2008, which lays down the Union list of food additives approved for use in food additives, food enzymes, flavourings and nutrients and their conditions of use.

2020.10.02 Stretch your Mozzarella yield by up to 1.3%

The increasing consumption of mozzarella, means cheesemakers are looking for ways to produce and convert mozzarella as quickly and efficiently as possible. At DSM, cheese experts have come to their aid with a new mozzarella culture, Delvo®Cheese CP-500.


So what are the benefits? First off, by using Delvo®Cheese CP-500, cheesemakers can get up to 1.3% more mozzarella from the same inputs. It achieves this increased yield by packing more moisture into the mozzarella.

But increased yield is not the only benefit. The combination of Delvo®Cheese CP-500 and Maxiren®XDS, fermentation produced chymosin coagulant, leads to improved texture and superior sliceability throughout a long shelf life. Another significant advantage!

JSC “ARDITA IR KO” contributes to the prevention of the pandemic by providing support to the Vilnius City Clinical Hospital Clinic of Children's Disease. We gave to the Clinic: KN95 respirators, disposable surgical masks, goggles, disposable medical hats, protective suits, disposable gloves, boot swabs.


We also support doctors by contributing to the “Menas be karūnos” project and we have made donations to the funds “Laikykitės medikai!” and “Blossom of Hope 2020”.

2019.12.30 Royal DSM completes acquisition of Royal CSK

Royal DSM, a global science-based company in Nutrition, Health and Sustainable Living, today announces the completion of the acquisition of a 100% interest in specialty dairy solutions provider Koninklijke CSK Food Enrichment C.V. ("CSK") for a cash consideration of about €150 million. The acquisition of CSK was first announced on November 18.

DSM’s Delvo Cheese CT-Light nominated for the FIE (Food Ingredients) Innovation Award 2017

DSM’s Delvo Cheese CT-Light allows cheesemakers to create continental cheeses using low-fat milk with the same taste texture that consumers expect from a full-fat product. During the cheese making process, the culture replaces fat with water without any negative impact on physical or sensory properties. With DelvoCheese CT-Light, fat can be reduced by 30 percent or more, alongside a significant cut in calories. This is done without additives or stabilizers. This total culture solution enables cheesemakers to meet the consumer demand for healthier options by giving the impression of a full-fat product but with less fat and fewer calories.

Delvo Cheese CT-Light can be applied in a broad range of cheeses. The primary application is the semi-hard cheese segment, for example, Manchego, Gouda, Tilsiter, Maasdam, Edam, Havarti, and Prato.

DSM Food Specialties’ Delvotest® T antibiotic residue test for milk has received its latest validation by an external laboratory with the publication of a new report by Finnish Food Safety Authority Evira. Based on extensive tests in the Evira microbiological laboratory, the report confirmed that Delvotest® T is a reliable, robust and easy to use test eminently suitable for detecting antimicrobial drug residues in milk. Rigorous testing in the dairy chain helps protect consumer health and assists dairy farmers in safeguarding quality and minimizing waste.

Delvotest T is a broad-spectrum test that identifies the widest range of antibiotics at European MRLs (Maximum Residue Levels), with particularly high sensitivity for tetracyclines. In the Evira validation study, Delvotest T was evaluated as to whether the achieved levels of detection in the laboratory were the same, or at acceptable levels of, MRL compared to the original validation. The study concluded that Delvotest T is sufficiently robust to provide farmers, dairy companies and control labs with an effective tool for routine residue analysis. 



We are proud to inform you that the Professor of Dairy Process Technology Peter de Jong, from Van Hall Larenstein University, has just tested and published a great article on the performances of our MAXIREN XDS in Continental cheese production. It is attached the article.

The tests were done independently (without DSM’s influence) and the article was published in May on the International Dairy Magazine (IDM), and mainly focuses the results of their tests with MAXIREN XDS on reducing the cheese footprint, with their own words:

Overall, the use of a new rennet [MAXIREN XDS] will yield a  substantial footprint reduction of almost 12%. Dairy companies have set themselves the target to reduce the footprint of dairy processes by 20% in 2020. The use of this new rennet already achieves a large part of the target for cheese production.

This gives an important message on the benefits of our MAXIREN XDS, which we can (and should) share with our current and potential customers. Additional benefits identified by Professor Peter de Jong:

-          Reduced variation in moisture level with XDS, leading to reduction of standard deviation of moisture by 16,6%  and consequent possibility of significantly increase production yield;

-          Reduced cutting losses by 15% in cheese cutting or slicing;

DSM introduces a new range of freeze-dried cultures for set yogurt formats at Gulfood Manufacturing. DSM has extended its range of continental cheese solutions with DelvoCheese CT-Taste, which is said to enable producers of continental cheeses to halve the ripening time of their cheese.  According to DSM’s internal data, for the production of 1 million kilograms of continental cheese with a typical four-week ripening time, reducing ripening time to two weeks would save around €200,000 in production costs.

DSM has extended its portfolio of Continental cheese solutions to meet the consumer demand for healthier cheese options. Delvo®Cheese CT-Light enhances the texture and taste of low-fat cheese, giving the impression of a full-fat product but with fewer calories.
Continental cheeses, such as Manchego, Gouda and Edam, each have a distinct flavor profile and are nutrient-dense. They provide protein, calcium, and vitamins A and B12, but are often high in fat. Efforts to reduce fat content have been challenging, with consumers unwilling to accept the resulting changes to taste and texture.

DSM Food Specialties announces the successful validation of its testing tool, Delvotest® T, for determining up to 27 antibiotic residues in raw cow’s milk and dairy ingredients, such as milk powders.

Validation was performed by two independent facilities in Europe and Asia in accordance with the European Community Reference Laboratories (CRL) guidelines.

The report states that “this multi-residue test was easy to use (no specialised analyst required), cost effective (no sample preparation), fast in terms of result delivery (3hrs 15mins) and robust since incubation temperature change and delay of reading did not impact the final result.
